Kat’s Cocktails: Pumpkin Rum Cider

Fall is here, and with fall comes pumpkin spice everything.  I love celebrating the season with fun festive drinks and the Pumpkin Rum Cider is just right for any fall occasion.  It really captures the warmth and spirit of autumn.  For this cocktail I used The Kraken Black Spiced Rum.  It’s the world’s first black spiced rum and has flavors of cinnamon, vanilla and nutmeg.  The Kraken is strong, rich and smooth and pairs perfectly with the pumpkin simple syrup (recipe below).  Add hard apple cider for a light and refreshing finish.  It’s delicious and it cuts the heaviness of the spiced rum.  

Pumpkin Rum Cider

In a small saucepan on med heat combine

1c. Water
1c. Sugar
1c. Pumpkin puree  and  1/2 tsp pumpkin pie spice

Stir together and bring to a boil. Then lower the heat and stir for 3-5 minutes.
Transfer to a mason jar and store in the refrigerator.  It should last about a week.

Spiced glass rim:

1 tbsp sugar
1 tbsp pumpkin pie spice    

Rub a lemon wedge on the rim of rocks glasses and dip them into the sugar/spice mixture.  Carefully fill the glasses with ice.  Combine rum, pumpkin simply syrup and lemon juice in a shaker and shake vigorously to combine.  Strain the mixture into the ice filled glasses ½  to ⅔ full and top with your favorite hard cider.  Cozy up with someone special and enjoy some autumn yumminess together!
